Chichibu is a distillery in the town of Chichibu in the far west of Saitama Prefecture, founded in 2004 by Ichiro Akuto. The owner's family has been distilling sake since 1625, and has also been producing blended whiskies since the 1940s. In 2008, they started producing their own single malt.
The whisky from Japan is like its makers. At first glance, reserved, respectful and polite. On closer inspection, however, enormously profound and multi-layered.
